Escarole
Coastal Roots Farm · EncinitasMeet escarole! A leafy green in the chicory family, escarole has broad, tender leaves and a pleasantly mild bitterness that mellows beautifully when cooked. Its darker outer leaves offer a more pronounced flavor, while the pale inner leaves are tender and slightly sweeter.
Escarole is a staple in Italian cooking, where it's often sautéed with garlic and olive oil, simmered into soups with white beans, or enjoyed fresh in salads with a bright citrus dressing.
TipKeep unwashed in the refrigerator's crisper drawer, loosely wrapped in a paper towel inside a bag. Best enjoyed within 5–7 days. Refresh wilted leaves in cold water before using.
