Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1 cup plant milk (almond, oat, or similar)
- 1 tbsp olive oil or melted coconut oil
- Pinch of salt
- 1 cup loquat syrup (see related recipe)
Method
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Add plant milk and oil, mixing until just combined.
- Heat a lightly oiled pan over medium heat.
- Pour batter into small rounds and cook until bubbles form, then flip and cook until golden.
- Stack pancakes and drizzle generously with loquat syrup.
