Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1 cup plant milk (almond, oat, or similar)
  • 1 tbsp olive oil or melted coconut oil
  • Pinch of salt
  • 1 cup loquat syrup (see related recipe)

Method

  1. In a bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add plant milk and oil, mixing until just combined.
  3. Heat a lightly oiled pan over medium heat.
  4. Pour batter into small rounds and cook until bubbles form, then flip and cook until golden.
  5. Stack pancakes and drizzle generously with loquat syrup.
  6. Serve warm and enjoy.
