Ingredients

  • 2 cups loquats, halved and seeds removed
  • 1 cup sugar
  • 1 cup water
  • 1 tbsp lemon juice

Method

  1. Rinse and prepare loquats, removing stems and seeds.
  2. Combine loquats, sugar, and water in a saucepan over medium heat.
  3. Bring to a gentle simmer, stirring occasionally to dissolve the sugar.
  4. Let simmer for 20–30 minutes, until the fruit softens and the liquid becomes fragrant.
  5. Lightly mash the fruit to release more flavor, then remove from heat.
  6. Strain through a fine mesh sieve or cheesecloth, pressing gently on solids.
  7. Stir in lemon juice and let cool before storing in a jar in the refrigerator.
