Ingredients
- 2 cups loquats, halved and seeds removed
- 1 cup sugar
- 1 cup water
- 1 tbsp lemon juice
Method
- Rinse and prepare loquats, removing stems and seeds.
- Combine loquats, sugar, and water in a saucepan over medium heat.
- Bring to a gentle simmer, stirring occasionally to dissolve the sugar.
- Let simmer for 20–30 minutes, until the fruit softens and the liquid becomes fragrant.
- Lightly mash the fruit to release more flavor, then remove from heat.
- Strain through a fine mesh sieve or cheesecloth, pressing gently on solids.
- Stir in lemon juice and let cool before storing in a jar in the refrigerator.
