Ingredients

  • 4 cups mixed greens (lettuce + spinach)
  • ½ small bulb onion, thinly sliced
  • 2–3 loquats, sliced (optional, for garnish)
  • ¼ cup loquat vinaigrette (see related recipe)
  • Olive oil (optional, to finish)
  • Salt and pepper to taste

Method

  1. Wash and dry greens thoroughly, then place in a large bowl.
  2. Add thinly sliced onion and gently toss to distribute.
  3. Drizzle with loquat vinaigrette and toss lightly until just coated.
  4. Taste and adjust with salt, pepper, or a touch more dressing as needed.
  5. Top with fresh loquat slices if using, and finish with a light drizzle of olive oil.
  6. Serve immediately.
