Ingredients
- 4 cups mixed greens (lettuce + spinach)
- ½ small bulb onion, thinly sliced
- 2–3 loquats, sliced (optional, for garnish)
- ¼ cup loquat vinaigrette (see related recipe)
- Olive oil (optional, to finish)
- Salt and pepper to taste
Method
- Wash and dry greens thoroughly, then place in a large bowl.
- Add thinly sliced onion and gently toss to distribute.
- Drizzle with loquat vinaigrette and toss lightly until just coated.
- Taste and adjust with salt, pepper, or a touch more dressing as needed.
- Top with fresh loquat slices if using, and finish with a light drizzle of olive oil.
- Serve immediately.
