November 6, 2026 · Recipe by A La Vuelta Farm

Delicata and beets roasted skin-on at 400°F, tossed with salad mix, feta or sunflower seeds, and a vinegar-orange dressing. From A La Vuelta Farm.

Roasted Delicata and Beet Salad

This flexible salad is Adriana Barraza’s Roasted Delicata and Beet Salad at A La Vuelta Farm. She leaves the beet skin on and sweetens the dressing with orange juice or honey.

CSA tips: Cut the beets no thicker than the squash so they finish together. Roast the vegetables ahead and dress the greens just before serving. Sunflower seeds stand in for the feta. For a cubed version with arugula and pumpkin seeds, see Roasted Delicata Squash, Beet, and Feta Salad.
