Dragon Fruit Smoothie

This pitaya smoothie is from Sunkissed KitchenMichelle Miller’s creamy blend of magenta dragon fruit, mango, banana, and a squeeze of lime. Dragon fruit is mild on its own; the mango and banana do the sweetening, and the lime keeps it bright.

CSA tips: Cube and freeze ripe dragon fruit (and extra mango or banana) so the smoothie stays thick without a pile of ice. If your fruit is pale or underripe, lean on the mango and a little extra lime. Almond or coconut milk both work; oat milk is fine too. For a bowl, use less milk and top with coconut, seeds, or whatever fruit is in the box.

Ingredients

  • 1 cup dragon fruit, cubed and frozen
  • 1 cup mango, cubed and frozen
  • 2 bananas, quartered and frozen
  • ¾ cup almond milk (or coconut milk)
  • 2 tbsp lime juice
  • ½ scoop whey protein powder (optional; use plant protein to keep it vegan)
  • 2–4 ice cubes, to taste

Method

  1. Add the frozen fruit, milk, lime juice, and protein powder (if using) to a blender. Blend until very smooth.
  2. Add more almond milk as needed to thin to the texture you want.
