This is the kind of salad that feels especially good in late spring and summer when strawberries are sweet and cucumbers are crisp. It works as a side dish, but it is also easy to turn into lunch with grains, chickpeas, or grilled chicken.
If you are prepping ahead, keep the dressing separate until serving so the fruit stays fresh and the salad does not get watery.
Strawberry Cucumber Salad
A quick chopped salad with juicy berries, cool cucumber, creamy avocado, salty feta, and fresh mint. The dressing is simple and bright, with white balsamic, lemon, olive oil, and a little maple.
Ingredients
- 1 lb strawberries, halved or quartered
- 2 mini cucumbers, sliced or chopped
- 1 avocado, cubed
- 1/2 cup red onion, thinly sliced
- 1/4 cup feta
- 1/4 cup fresh mint, chopped
- 1/3 cup olive oil
- 3 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- 2 tbsp maple syrup
- Salt and pepper, to taste
Method
- Whisk together the olive oil, white balsamic vinegar, lemon juice, maple syrup, salt, and pepper until combined.
- Place the strawberries, cucumbers, avocado, red onion, feta, and mint in a large bowl.
- Drizzle with dressing to taste and toss gently so the avocado and berries stay intact.
- Serve right away, or keep the dressing separate until serving if making it ahead.
