Moroccan Spiced Tomato and Carrot Soup

This weeknight soup is from Healthy On You — Moroccan Spiced Tomato and Carrot Soup. Their Moroccan 'Round the Clock blend is what makes a simple tomato-carrot puree taste like something you'd order out. If you don't have that jar, ras el hanout or a mix of cumin, coriander, cinnamon, and a pinch of cayenne gets you in the neighborhood.

CSA tips: Box carrots go in raw — no need to roast first. In tomato season, swap the can for about 3 cups chopped ripe tomatoes and keep the tomato paste so it stays rich. Basil from the bunch is the finish; a swirl of coconut milk makes it feel like more than a blender lunch.

Canned tomatoes, raw carrots, shallot, and garlic blend with Healthy On You Moroccan 'Round the Clock spice, vegetable stock, and a splash of coconut milk. Recipe by Healthy On You — a Vitamix can cook it on the soup setting; any blender works if you finish it on the stove.

Ingredients

  • 1 (26 oz) can chopped tomatoes
  • 1 cup raw carrots, chopped
  • ¼ cup olive oil
  • 2 tbsp Healthy On You Moroccan 'Round the Clock spice blend (or ras el hanout)
  • 1 medium shallot, quartered
  • 2 garlic cloves
  • 2 tbsp tomato paste
  • 1 tsp sugar (optional)
  • 1½ cups vegetable stock
  • ¼ cup coconut milk, plus more for garnish
  • 2 tbsp fresh basil
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • Grated Parmesan and more fresh basil, for garnish (optional)

Method

  1. Add all ingredients to a blender.
  2. If using a high-powered Vitamix, use the Hot Soup setting with the lid secure and blend until it stops. Remove the lid carefully — the soup will be steaming hot.
  3. If using a regular blender, blend 2–3 minutes, then transfer to a pot. Bring to a boil, reduce to a simmer, and cook, stirring occasionally, for 10 minutes.
  4. Taste and adjust salt and pepper.
  5. Serve hot with a drizzle of olive oil, extra coconut milk, Parmesan if you like, fresh pepper, and basil.
