Ingredients

  • 2 bunches collard greens, de-stemmed and chopped
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Method

  1. Heat olive oil over medium heat and saute onion until translucent.
  2. Add garlic and stir for 30 seconds.
  3. Add collards in batches, stirring as they wilt.
  4. Pour in broth and vinegar, season lightly, then simmer covered for 45 minutes.
  5. Taste and adjust salt, pepper, and vinegar before serving.
