Collard Greens (Cynthia's Recipe)
A classic way to enjoy collard greens from the farm.

Ingredients
- 2 bunches collard greens, de-stemmed and chopped
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 4 cups vegetable broth
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
Method
- Heat olive oil over medium heat and saute onion until translucent.
- Add garlic and stir for 30 seconds.
- Add collards in batches, stirring as they wilt.
- Pour in broth and vinegar, season lightly, then simmer covered for 45 minutes.
- Taste and adjust salt, pepper, and vinegar before serving.
