Bean Bake with Greens and Turnips

A hearty oven bake with white beans, wilted turnip or kale greens, crushed tomato, and thinly sliced turnips on top — dinner with crusty bread.

When you have a bunch of turnips with the greens still attached, this bake uses both — wilted greens in the base and thin slices on top. Corona beans are ideal if you can find them; cannellini works well too.

Tips: For completely tender turnips, steam the slices briefly before layering. Overlap the slices on top — they crisp and shrink in the oven. Serve with crusty bread for a full meal.
Bean Bake with Greens and Turnips
An easy, beautiful bean bake from Erin Alderson at Naturally Ella — corona beans (or cannellini) with wilted greens and thinly shaved turnips baked until the sauce bubbles.
Ingredients
- 2 tsp olive oil
- 1 clove garlic
- 2 cups packed kale or turnip greens
- 2 cups cooked corona beans (cannellini also work)
- 2 cups crushed tomato
- 1 tsp fresh minced rosemary
- ¼ tsp salt
- ¼ tsp black pepper
- 2 medium purple-top turnips, thinly sliced
Method
- Preheat the oven to 425°F. Heat a medium oven-safe skillet or cast iron pan over medium-low heat.
- Add olive oil, then garlic. Cook until fragrant and golden, 1 to 2 minutes.
- Stir in the greens, reduce heat to low, and cook until just wilted, 1 to 2 minutes.
- Add beans, crushed tomatoes, rosemary, salt, and pepper. Stir to combine.
- Arrange thin turnip slices in an overlapping layer on top.
- Bake 20 to 25 minutes, until the tomato sauce is bubbling and the turnips are tender.
